“Riced” Cauliflower Recipe

I’ve never liked cauliflower. For some reason, I can never eat cauliflower florets, I’m not sure why… I love broccoli which is very similar to cauliflower, however there’s just something about cauliflower that keep pushing me away! Lately, I’ve been trying to maintain a low carb diet and it’s been so hard. Like carbs love me and sadly, I love them too! I’ve been trying to find substitutes for food like rice which has a lot of carbs, therefore, I decided to try “riced” cauliflower. And let me tell you, I love it! I did not except to like it because I don’t like cauliflower florets but the “riced” cauliflower is one of the most amazing thing I’ve tried in 2018! 

I’ve cooked it different ways since the first time that I tried it! Today, I’m gonna share with y’all my favorite way to cook it so far! It’s very easy and literally takes less than 40 minutes. 

What I Use…

  • “Riced” Cauliflower
  • 3 Bell peppers (Green, Orange, Red)
  • Organic Black beans
  • 2 Chicken breasts
  • Seasonings- Black pepper, Sea salt, Paprika, Garlic powder, chicken seasoning
  • Olive oil

How..?

Start by cleaning chicken breasts with lime/lemon and vinegar. Then add seasoning to the chicken and refrigerate/let it sit for about 15 mins. Dice all 3 bell peppers and set aside.

 Heat about 2 tbsp of olive oil in a large pot, then add the peppers along with the beans. Saute everything for a few minutes before adding the whole bag of “riced” cauliflower. Add black pepper, sea salt, garlic powder and mix everything. In a skillet,  heat 2 tbsp of olive oil, then add marinated chicken. Cook over high heat until the chicken is perfectly golden. 

Enjoy with some avocado (Optional)!
