5 Healthy and Easy Lunch Ideas- SmileyMaruth Kitchen!

You guys have been loving my food content especially on my Instagram stories. Therefore, I figured that I would incorporate more food posts on SmileyMaruth! For today’s post, I have 5 healthy lunch ideas  that you can prep for school and/or work. They are super easy to make and don’t require any special cooking skills! Enjoy!

1. Green Salad with shrimp

A personal fave of mine! For this salad, I threw some herb and salad mix in a bowl as a base. Then, I added some sauteed zucchini noodles along with some sauteed shrimp, one tomato and half an avocado to the bowl. Lastly, I topped it all with some hemp seeds for extra protein boost and some sweet chili sauce for taste. Let me tell you, this salad will have you lick the entire bowl when you’re done. Yes! It is that good!

2. Garlic Jalapeno Shrimp with Quinoa

This dish is perfect for meal prepping and it’s so delicious! I cooked the quinoa in vegetable broth with peas and corn. I sauteed the shrimp with sea salt, garlic powder, garlic jalapeno seasoning. This is optional, but you can make some side sauce for the quinoa while cooking the shrimp if you don’t like your meal super dry.

3. Buffalo chicken lettuce wrap

If you are trying to avoid unhealthy carbs, you will love this one. You can use whichever fillings that you like. I use homemade buffalo chicken with corn, broccoli and carrots slaw, avocado and some light blue cheese. So delicious!

4. Veggie Pasta

I love pasta! That’s a fact!  I also love pasta with lots of veggies because it’s an easy way for me to get most of my veggies in for the day. I always use whole grain or quinoa/brown rice pasta. I cooked the pasta according to the box’s directions. Then, I added some of my favorite vegetables such as broccoli, zucchini, bell peppers, spinach and corn. And voila! This meal is very flexible and is great for meal prep. You can make this under 20 mins which is a life saver.

5. Zoodles with meat sauce.

Zoodles is a great substitute for pasta. If you feel like you’re eating way too much spaghetti or unhealthy pasta, you have to try zucchini noodles. There are so many ways to make it and it takes less than 10 mins to cook. I use some ground turkey to make a homemade meat sauce. I sauteed the zoodles for about 4-5 mins and steamed some broccolini (baby broccoli). I threw everything on a plate and that’s it! So yummy! Can you tell by my face?!
