I have a pretty busy life right now! It’s summer so I decided to look for a second job so I could save some money before I go back to school. I wasn’t taking any summer classes this year so why not? Right?! I get asked a lot how do I find time to go to work, workout, eat healthy-ish and binge watch Netflix… (By the way, I’m currently watching Hawaii Five-O and it’s one of the best show ever!!)
Back to our tropic, well to answer this question, I make time and prioritize the things that matters the most to me. I do weekly grocery shopping and I do weekly meal-prepping. I know it sounds like a lot, especially when you’re working two jobs, however, trust me, it is pretty easy! Sometimes I do my meal-preps on Sunday, sometimes Monday or Tuesday; it all depends on what my weekly work schedules look like. Maybe I’ll do a whole post about how to prioritize/ plan ahead… Who knows! So let’s take a look at what I eat in a typical day…
Breakie
Lately, I’ve been loving smoothie bowls, especially since it’s summer. I like to play around with my smoothies by trying different fruits. They are very refreshing and they always make me feel like I’m on some tropical island! Oh gosh, I really wish I was in Hawaii right now! Anywayyyyyss! Here, I have one of my favorite smoothie bowl, The Onolicious kiwi smoothie bowl!
For this smoothie bowl, I blended 1 banana, a couple frozen chunks of mango and pineapple, half a cup of spinach, 2 kiwis, 1 scoop of protein, 1 tbs of chia seed, 1 tbs of flax seed, 1 tbs of unsweetened coconut flakes with some water. PS: Don’t put a lot of water because you don’t want it to be too watery… Then I use 1 kiwi, some more chia seed and unsweetened coconut flakes for topping. It is so yummy and again very refreshing.
Snack
I usually choose my snack based on what I have in my fridge or pantry and what mood I’m in! Most of the time I go for some fruits or crackers with cucumbers. I decided to go with this fruit salad made of some of my favorite fruits: Orange, Kiwi, grapes! It was so delicious!
Lunch
For lunch, I always like to go with salads or chicken/veggie wrap with sweet potato fries. Here, I have a quick, simple salad made with some cut up romaine lettuce, arugula, grape tomatoes, avocado and organic raw sliced almonds. Then add salad dressing… Currently, my favorite salad dressing is the green goddess salad dressing from Trader Joe’s. It is by far one of the best healthy, low calorie salad dressing that I’ve used. My drink was some organic 100% pure coconut water and this beautiful little gluten free cupcake were both from Trader Joe’s.
Dinner
For my last meal, I went with some quinoa bowl! I love quinoa! I always try to cook it different ways so I don’t feel like I’m eating the same thing over and over. This time, I decided to cook the quinoa Tia Mowry’s way! From Tia’s book Whole New You, I found this recipe for this dish called Quinoa Tabbouleh. It is a Middle Eastern dish made with quinoa, onions, tomato, cucumbers, kalamata olives (which I didn’t use), parsley, garlic and mint leaves. It was so yummy and all the flavors from the veggies blended so well together! I highly recommend it!
Before bed, I’ll usually have another snack or some tea or matcha latte which is one of my favorite hot/cold beverage!
What I eat in a day definitely changes from day to day depending on my schedule. Most of the time I pack my lunch and my snacks if I’m going to be at work all day; and instead of dinner, I’ll have another snack or cereal or a shake/ smoothie.
