I love – I mean, I LOVE BREAKFAST! I call them breakie! And it’s not because ”it’s the most important meal of the day”! For me it’s way deeper than that. I believe breakfast brings everyone together and it always makes me happy. That’s one meal that will require everyone to make it to the table when I have a family. I’m imagining my husby and I cooking for our 4 little bundles of joy in our very big and bright kitchen! Haha alright, alright! Let’s get back on topic! Today, I’m sharing with you my top 5 go-to breakfast that are full of great nutrients and they’re, of course, healthy.
1. The first one is a simple Yummy Veggie Omelette! I actually make omelette more than I want to admit. I believe it’s one of the easiest breakfast ever. You can use any of your favorite veggies. I always go for broccoli, spinach, bell peppers, onions. Sauteed all your veggies for a couple minutes in some virgin olive oil. Then, whisk 2-3 eggs in a bowl with some seasoning. Transfer eggs into the skillet, let it cook for a few minutes, and voila!
2. My second fave healthy breakfast is oatmeal! It’s not the regular boring oatmeal, I promise. The good thing about oatmeal is that there are so many ways that you can make it. There might be a post in the near future about different ways to make oatmeal. I either use instant oatmeal or old fashioned oats. In a bowl, add 2 bags of instant oats, some water and put it in the microwave for 2-3 minutes (or you can follow the directions on the bag/box. Then I add 1 tsp of chia seed, 1 tsp of hemp seed, 1 tbsp of peanut butter, about 3 tbsp of milk and I mix everything together. I usually finish it off by adding some kind of fruits such as banana, strawberries or kiwi. It cannot get as healthy as that! It is packed with lots of protein and nutrients!
3. Then we have the cold, tropical, healthy breakfast queen, Acai bowl! If you’ve never tried acai bowl before, you have to. I’m sure you’ll find a smoothie place that sells it or you can make your own by purchasing the organic acai puree at your local grocery store. I make my own acai bowl by blending the puree with frozen fruits, frozen spinach, 1 scoop of protein powder, chia seed, hemp seed, flax seed and water or milk. For toppings, I use fresh fruits that I have on hand, unsweetened coconut flakes, granola seed and fruits. I love acai bowl because I always feel like I’m on some tropical Island even though I live in New England and it’s currently winter.
4. Healthy Breakfast #4 is probably the easiest of them all- Rice Cake PB topped with Fruits. Long story short, I did not really like rice cake the first time that I tried it because i thought it was way too boring. However, now I love it, especially for a good yummy breakfast. Spread some peanut butter on 1 or 2 rice cakes(I usually go with 2), cut whichever fruits that you have on hand and throw them on your pb rice cake. Then topped with your favorite seeds (chia seed) and some agave nectar. And you’re good to go!
5. High Protein Healthy Breakfast Quesadilla is my newest addition to the breakfast club! I love quesadilla, that’s a fact! You might wonder why I would eat quesadilla in the morning… However, you would eat it too if you only knew how delicious this thing is actually.
