This high protein breakfast quesadilla will brighten your morning! Trust me! The combination of the bell peppers, onions, eggs and the cheese, yes, lots of cheese, is exactly that little kick you need to get your weekend started on a beautiful Saturday morning, any day of the week for that matter. I use a spinach tortilla because that’s what I had on hand but any kind of tortilla will work! This will become your favorite breakfast!
High Protein Breakfast Quesadilla
This high protein quesadilla is very easy to make. I recommend prepping everything that you are going to need for this recipe beforehand. Prep everything and set them aside. All the products that I used are from Trader Joe’s except the spinach tortilla which is from Walmart.You are more than welcome to use your favorite veggies for the quesadilla and add your own little twist to it. Enjoy!
- 3 tbsp olive oil ((I use extra virgin))
- Bell peppers ((Green, Orange, Red))
- Onions
- 1/2 cup Part-Skim mozzarella ((Low moisture))
- 1 tsp Seasoning salt
- 1 pinch Cayenne Pepper
- 1 tsp Garlic powder
- 1 tsp Black pepper
- 2 Large Brown Eggs
- 2 tbsp whole milk ((Optional))
- Ground Turkey ((Optional)
Start by looking for all your ingredients and set everything on your counter.
Dice bell peppers and onions, then set aside.
Add 2 eggs to a small bowl along with 2 tbsp of milk and the seasonings. Then whisk until everything is well mixed.
Heat 2 tbsp of olive oil in a non-stick fry pan. Then add bell peppers and onions along with the turkey into the pan and sauteed for 2-4 mins.
Transfer the eggs from the bowl to the pan and stir gently until fully cooked.
In a large plate, have your tortilla ready with cheese on one side. Then add cooked eggs o.n the side of the tortilla with the cheese.
Add more cheese on top of the egg and fold the other side over. Use your hand or a spatula to press on.
Place a grill pan or a large skillet on medium heat and coat it with cooking spray
Carefully transfer the soon-to-be quesadilla over the heated grill pan or skillet.
Cook quesadilla per side until side is golden.
Lastly, transfer quesadilla over to a plate and use a knife to cut it in half!
