There are certain meals that I could literally eat everyday. For instance, french fries, pizza, burrito bowl with lots of guacamole and chicken stuffed with spinach and cheese e! I found out about chicken stuffed with spinach through my amazing friend’s snap story, Jer! It looked so delicious on his story that I had to ask him about the recipe! Sure enough, he told me about it and gave me a list of what he used to make the delicious, juicy stuffed chicken! I know I had to try it right away! However, that did not happen until about 3 weeks later when I was out of idea for my weekly meal prep. So I went to Trader Joe’s to buy all the ingredients that I needed to make the dish! I also added some of my own twist to it by turning it into a roll-up instead and using different seasoning.
Ingredients
- 4 thin Chicken breasts
- 2 cups of copped fresh spinach
- 1 chopped clove of garlic
- 1 cup of feta cheese
- 1/3 cup of mozzarella cheese
- 1 tbs of lemon pepper seasoning
- 1/2 tbs of black pepper
- 2 ts of seasoning salt
- A dash of sea salt
- 1 tbs of chicken seasoning ( I use this Kick’n chicken seasoning by Weber from Walmart)
- 2 tbs of olive oil
- 1 lime
- 2 tbs of ACV
Make
- Preheat the oven to 450°F
- Clean chicken with lime and ACV.
- In a pan, add 1 tbs of olive oil, the garlic , the spinach, then use a spoon to stir the content until the spinach is all wilted.
- Transfer the spinach into a large bowl along with both the feta cheese and the mozzarella cheese. Then Mix them.
- Then lay up the chicken breasts on a cutting board or on a clean counter top. Use your clean hands or a spoon to transfer the spinach and cheese mix onto the thin chicken breasts.
- Roll up the chicken up and secure with toothpicks (I used 2).
- In a large pan, heat up 1 tbs of olive oil, then add chicken.
- Half way through cooking, remove chicken from pan and bake until golden and cheese is melted.
- Enjoy!!!!!!!!!!!
